For the third installment of “That’s 5 Chicago,” we spoke with Chef Ed Tinoco, Executive Chef at Next in Fulton Market. Going along with its name, Next introduces brand new, uniquely-inspired menus every four months, and the ever-changing restaurant is no stranger to recognition from local critics and world restaurant rankings.

The following has been lightly edited for length and clarity.

How has Chicago influenced you?

As a native New Yorker, I have to admit that the stereotype of midwestern hospitality is true. People here in Chicago are welcoming, humble, honest, extremely hardworking, and real. As a result of all these attributes, Iā€™ve found that itā€™s been so easy to connect and contribute to the creative culture of this city. People are open, accepting, and thereā€™s a competitive yet friendly spirit that pushes people to create new concepts. Iā€™m constantly inspired to put myself out there and being able to do so without worrying about fear of rejection is something Iā€™ve found to be completely unique to Chicago.

What is most overrated, right now?

Social media influencers. They come across as narcissistic, selfish, and lacking a true and authentic personality. People with that kind of power, attention, and following should use their influence to promote society instead of themselves. Iā€™d love to see influencers use social media as a platform to educate others about their craft, instead of choosing a filter that makes their life look better than reality.

Also extremely overrated: La Croix. That shit sucks.

What is most underrated, right now?

J. Cole, kombucha, YouTube, plants. And Jalapeno Cheetos. Trust me, and thank me later.

What advice would you give to the next generation of Chicago creatives?

Donā€™t settle. Donā€™t compare yourself to ā€œinfluencers.” Donā€™t focus on whatā€™s going on in New York or LA or anywhere else but where you are. Aim for the sky, be your best self, and the time will come for you to stand out in Chicago. Avoid trying to capture and share every moment of your lifeā€”you will miss out on the growth of this city, which is a beautiful thing that can only be experienced by those living in and contributing to it.

What’s next for you?

I want to keep building myself as an individual and as a professional by inspiring the city of Chicago and the rest of the country with food, art, and collaborations with the many talented individuals and groups I consider friends. But if youā€™re asking what the upcoming menu at Next is, youā€™ll have to come in yourself to see.
